Crunchy Granola anyone?

One thing I can assure you is I'm no whizz in the kitchen but I do love to make healthy soul foods at home.

I also love to cook at home because I want to know what goes in to my food. If you have the time, I highly recommend it, your body will begin to thrive on nourishing homemade meals.

So here's the recipe that goes with that delicious looking photo above. Its not my recipe but easily adaptable to your desires or food related needs: use organic or unsweetened, exchange one item for another. or omit something altogether It all works!

Coconut Chia Granola

  • 2 cups rolled oats
  • 1/2 cup shredded coconut
  • 1/4 chia seeds
  • 1/2 tsp cinnamon
  • 1/2 cup maple syrup (I ran out and used half honey)
  • 1/4 cup coconut oil
  • 2 tsp vanilla extract
  • 1/2 tsp coconut extract (optional)

Although the recipe didn't ask for it I also added mixed nuts/seeds and some dried fruit.

Combine all ingredients in a large bowl.

Spread over a large baking tray. (keep in mind the edges cook the fastest so not too thin on the edges)

Bake at 180 C for 20 mins (at most)

Leave it to cool for 15 mins before breaking up in to clusters.

Stores in an air-tight container for up to 2 months (Ha haaa good luck, ours lasted 5 days!)

That's it. Nice simple granola to sprinkle on your breakfast oats or dessert. So delicious and adaptable.
